Instructions

1. In a large mixing bowl, combine the ground pork, ground beef liver, diced pork fat, and finely chopped onion.
2. In a separate bowl, mix together the bread crumbs and milk until well combined.
3. Add the bread crumb mixture to the meat and liver mixture, and stir until well combined.
4. Sprinkle the salt, black pepper, mustard powder, paprika, ground nutmeg, garlic powder, celery seed, ground coriander, ground thyme, ground allspice, ground cinnamon, ground cloves, and cayenne pepper (if using) into the meat mixture. Stir until all the seasonings are evenly distributed.
5. Once the mixture is well combined, transfer it to a large loaf pan or sausage stuffer.
